Stir-fried aubergines and courgettes
Ingredients
- 2 large aubergines
- 4 courgettes
- 30 cl olive oil
- Salt, freshly-ground pepper
Method
Cut the aubergines and courgettes in 2 mm-thick slices using the CL50 vegetable preparation machine with a 2 mm slicing disc.
Sweat the aubergines with salt to remove excess liquid.
Heat the olive oil in a large frying pan.
Brown the aubergines and courgettes on both sides over a medium heat for 5 to 8 minutes.
Drain the vegetables on paper towel.
Adjust the seasoning.
