Lebanese Flan
Ingredients
- 40 cL (1¾ C) milk
- 35 g (¼ C) flour
- 80 g (¼ C) sugar
- 1 T orange-flower water
For syrup:
- 2 T water
- 1 T rose water
- 3 T superfine sugar
Prepare cream:
Mix flour into milk. Add sugar.
Boil until mixture thickens.
Mix with whisk attachment of the Mini MP 190 Combi.
Add orange-flower water.
Pour mixture into ramekins.
Let cool for ≥3 h in refrigerator.
Prepare syrup:
Mix sugar, water, and orange-flower water.
The syrup should thicken slightly, and the sugar should be thoroughly melted.
Allow to cool.
Immediately before serving, transfer flans from molds to serving dishes, cover them with syrup, and sprinkle with crushed pistachios.
