Sweet Milk Rolls
Ingredients
For 50 rolls:– 2.05 kg (4.5 lb) all-purpose flour
– 820 g (3½ C) milk
– 410 g (0.8 lb) eggs
– 102 g (3.6 oz) yeast
– 37 g (2½ T) salt
– 205 g (¾ C) sugar
– 410 g (1¾ C) butter
Kneading: Cut butter into small pieces, and leave at room temperature for 15 min.
Put all ingredients into Robot-Coupe appliance bowl, mixing for 5 min at Speed 2 and 9 min at Speed 3
First Proof: 30 min
Dividing: Form 80-g balls
Intermediate Proof: 15 min
Shaping: Form elongated loaves, proceeding as for the Traditional French Bread recipe.
Beat two eggs. Daub buns with egg.
Final Proof: 45 min
Loading: Daub with beaten eggs, and score with scissors
Baking: 15 min at 250 °C (480 °F)
