
Bissara (Fava Bean Soup)
Ingredients
- 200 g (7 oz) dried fava beans
- 4 cloves of garlic
- 2 lemons
- 1 red chili pepper
- Cumin
- Olive oil
Directions:
Soak fava beans for 5 to 6 h.
Bring salted water to a boil.
Add fava beans, olive oil, and garlic; cover; and cook over medium heat.
When beans are ready, strain out the stock and set aside.
Mix all of the above ingredients with the Mini MP 190 V.V. immersion blender, gradually adding reserved stock until the mixture has a velvety texture.
Sprinkle bissara with cumin and chopped chili pepper before serving with lemon quarters.
