
Fried Eggplant and Zucchini
Ingredients
- 2 large eggplants
- 4 zucchini
- 30 cL (1¼ C) olive oil
- salt and freshly ground black pepper
Directions:
Cut eggplants and zucchini into 2-mm slices using the CL50 food chopper’s 2-mm slicing disc.
Salt eggplants to remove moisture.
Heat olive oil in large frying pan.
Fry eggplant and zucchini slices on both sides over medium heat for 5 to 8 min.
Set on paper towels to remove excess oil.
Reseason if necessary.
