Pizza

Ingredients

- 500 g (3 C) flour
- salt
- 30 g (1 oz) baker’s yeast
- 1 t sugar
- 5 T olive oil
- 3 medium onions
- 3 cloves of garlic
- 1 bunch of parsley
- 250 g (9 oz) tomatoes
- 2 t cumin powder
- 1 t ground coriander
- 1 t paprika
- Freshly ground black pepper

Directions:
Put flour and 1 t salt in a mixing bowl. Make a hollow at the center of the surface of the flour.
Put yeast and sugar in hollow. Add 10 cL (≈ ½ C) water, mixing the yeast and sugar in it with some additional flour.
Cover and let sit for 10 min.
Add 2 T oil and knead dough in Robot-Coupe food processor bowl.
Gradually add 20 cL (≈ 1 C) of warm water.
Knead dough with hands until soft.
Shape it into a ball, cover it, and set it aside for about 1 h: it should double in size.
Peel the onions, and mince them in the Robot-Coupe food processor bowl.
Peel and chop the garlic. Wash and mince the parsley.
Fry ground beef, onions, and garlic in olive oil for 5 min.
Add chopped tomatoes and spices.
Pour in 15 cL (≈ ¾ C) water, and mix all ingredients well. Season.
Spread out dough.
Cover with tomatoes and ground beef. Bake at 240 °C (460 °F) for 8 to 10 min.


Garnish with black olives.
