Vegetable Salad
Ingredients
- 6 tomatoes
- 3 cucumbers
- 6 bell peppers (3 green, 3 red)
- 150 g (5.5 oz) black or green olives
- 2 onions
- 100 g (3.5 oz) garbanzos
- ½ C lemon juice
- ½ C oil
- ½ t salt and pepper
Directions:
Peel tomatoes and remove their seeds. Dice tomatoes with CL 50 food chopper using 8-mm3 dicing disc.
Cut bell peppers into thin strips using 2-mm2 julienne disc.
Peel cucumbers, and slice them using 3-mm slicing disc.
Clean and halve radishes. Peel and chop onions in food processor bowl.
Put all of the above ingredients in a mixing bowl, together with the garbanzos and pitted olives.
Add lemon juice and oil. Season with salt and pepper.
Mix well and chill for 1 h before serving.
